Chicken (of the Woods) Cacciatore


1 lb (500g) chicken of the woods, cleaned and left in large steaks

3 tablespoons olive oil

1 large onion, sliced

3 cloves garlic, minced

14 ounces tomato purée

1/2 cup chicken stock (vegetable stock for vegetarian/vegan)

1 cup sliced kalamata olives

1/2 cup parsley, chopped

salt to taste


  1. In a pot, sauté the onion and garlic until slightly translucent.

  2. Layer in the chicken of the woods steaks and allow them to sweat for 5 -10 minutes.

  3. Add in the tomato purée, stock, and salt and stir. Cook for 10-15 minutes on medium low heat allowing the mixture to simmer.

  4. Add in the kalamata olives and parsley and cook for an additional 10-15 minutes until the sauce thickens.

  5. Serve over rice or polenta and enjoy!
