This colorful recipe from the Food Network is perfect for a summer party. It is a tangy, refreshing dessert and everyone will want a second piece. But, beware rogue blueberries that might ruin your pictures!
Yield: 8-10 servings
Ingredients:
Frozen Pre-made Crust
Filling:
1 8 oz package cream cheese
½ cup granulated sugar
1 teaspoon vanilla extract
Topping:
Fresh strawberry, kiwi, mango slices and blueberries
Glaze:
1 6 oz can frozen limeade concentrate, thawed
1 tablespoon cornstarch
1 tablespoon fresh lime juice
¼ cup granulated sugar
Instructions:
1. Preheat oven to 350 degrees F.
2. For the crust, prick the base with a fork and bake for 10-12 minutes until lightly brown. Let cool to room temperature.
3. For the filling, beat the cream cheese, sugar, and vanilla together until smooth.
4. Spread over the cooled crust.
5. Arrange fruit slices over the filling and set aside.
6. In a small saucepan, combine the limeade, cornstarch, lime juice, and sugar. Cook over medium heat until clear and thick. Let cool to room temperature. Glaze the fruit on the tart with a pastry brush. Not all of the glaze will be used.
7. Refrigerate the tart until ready to serve.
