Summer Salad with Sumac Dressing

Ingredients:

1/2 head of radicchio, chopped

1 english cucumber, sliced

1 medium beefsteak tomato, chopped

1/4 large red onion, sliced

1/2 cup parsley, chopped

1/2 avocado chopped


For the dressing:

1/4 cup extra virgin olive oil

1/2 cup sumac drupes

1 teaspoon cumin

juice of half a lemon

salt and pepper to taste

a splash of water to loosen


Instructions:

  1. Combine all the dressing ingredients in a food processor and combine until smooth. Tip (I didn't try this yet since it came to me after): Strain the seeds out of the dressing using a cheese cloth.

  2. Create a bed of radicchio. Layer veggies in neat rows on top and garnish with parsley.

  3. Pour the dressing over the salad to taste and enjoy!
