Vegan Chocolate Chip Cookies

Yield: 20 cookies


½ cup Smart Balance Original

½ cup granulated sugar

½ cup dark brown sugar, packed

50 g Simply Eggless (Plant Based Egg from Trader Joe's)

1 teaspoon vanilla extract

½ teaspoon baking soda

1 teaspoon warm water

1 ½ cups all purpose flour

3/4 cup semisweet chocolate chips


1. Preheat oven to 350 degrees F.

2. In a stand mixer, cream the granulated sugar, brown sugar, and smart balance until smooth. Beat in the Simply Eggless and stir in the vanilla.

3. Dissolve the baking soda in warm water and add to the batter along with the salt.

4. Mix in the flour and add the chocolate chips..

5. Drop large spoonfuls of batter onto a parchment paper-lined baking pan.

6. Bake for 14-16 minutes or until the edges are nicely browned. Allow the cookies to cool for five minutes and transfer them to a plate. Serve warm.
