I threw this recipe together for quick and easy meal prep. It makes roughly 8-9 portions of 300 g spaghetti squash and 8 oz of meat sauce (which is approximately 400 calories per serving).
Ingredients:
2-3 large spaghetti squashes
1 box Trader Joe’s Mirepoix Mix
1 tablespoon garlic powder
2 tablespoons olive oil
2 packages Trader Joe’s Extra Lean Ground Beef (96% lean/4% fat)
1 28 oz can tomato puree
1 28 oz can crushed tomatoes
salt to taste
Instructions:
1. Preheat the oven to 425 degrees F.
2. Cut the squash vertically down the center. Spoon out the seeds. Cut several half an inch deep slits into the open side of squash (don’t cut through the shell). Season lightly with salt and olive oil.
3. Place squash halves, cut side down, on a baking sheet wrapped in foil.
4. Roast in the oven for 45 minutes.
5. In a large pot, add the olive oil. Add the mirepoix mix and cook until the onions are translucent.
6. Add in the ground beef and garlic powder and cook thoroughly until the meat is no longer red.
7. Add the two tomato cans and mix.
8. Add salt (about 1-2 teaspoons, more if you’d like).
9. Cover and cook on medium heat for 10 minutes. Uncover and continue to cook for an additional 15-20 minutes or until the sauce has thickened enough.
10. When the squash is fork tender (after 45 minutes), remove them from the oven and allow to cool for 10-15 minutes.
11. Scrape the squash strands from their shells into a large bowl. Plate some spaghetti squash and top with some meat sauce. Enjoy warm or reserve for meal prep.
