Beach Plum Muffins

Made in collaboration with Diana from Edible Excursions!

Ingredients:

1 cup beach plums, de-pitted and halved (or regular plums, diced)

1/2 cup butter, melted

1/2 cup granulated sugar

2 eggs

1 teaspoon vanilla extract

1 cup plain Greek yogurt (0% fat)

2 teaspoons baking powder

1/2 teaspoon baking soda

2 cups flour

Optional: Raw cane sugar or lavender sugar


Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Wash the beach plums, slice in half, and remove the pits. Place in a bowl and set aside.

  3. Into a large bowl, combine the sugar and butter. Stir in the eggs, vanilla, and yogurt. To this mixture, add the baking powder, baking soda, and flour. Stir to combine until the mixture is fluffy.

  4. Gently stir in the plums.

  5. Grease a muffin tin or prepare the tin with cupcake wrappers. Fill the tins 3/4 full with muffin batter. Optional: sprinkle tops of muffins with raw cane sugar. We sprinkled the muffins with some lavender sugar that Diana made.

  6. Bake for 16-20 minutes or until a toothpick comes out clean. Allow to cool for 5-10 minutes and enjoy!
