Ingredients:
½ cup margarine, softened
¾ cup granulated sugar
1 cup pumpkin purée
1 egg (or 1 heaping tablespoon applesauce to make this recipe vegan)
1 teaspoon vanilla
2 cups flour
1.5 tablespoons pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda
pinch of salt
¾ cup chocolate chips
Instructions:
Preheat oven to 375 degrees F.
In a large bowl, cream the margarine and sugar until light and fluffy. Mix in the pumpkin purée, vanilla, and egg (or applesauce).
In another bowl, mix the flour, cinnamon, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix well.
Stir in chocolate chips.
Fill in muffin tins about ¾ of the way high and bake for 20 minutes until a knife can pierce and come out clean. Let cool for 15 minutes before serving.
