I threw this recipe together on a busy work night in time for a coffee hour the next morning. It was definitely a crowd pleaser. Serves 8-12 people.
Ingredients:
15 oz can pumpkin puree
14 oz can sweetened condensed milk
2 eggs
2 tablespoons Trader Joe’s Pumpkin Pie Spice
1 frozen pie crust, thawed in fridge (I used Marie Callender’s)
Instructions:
1. Preheat the oven to 425 degrees F.
2. Whisk all of the wet ingredients together with the spice.
3. Pour the wet mixture into the thawed, but still cold pie crust.
4. Bake at 425 degrees F for 15 minutes. Reduce heat to 350 degrees F and bake for another 35-40 minutes until done. Remove from oven and let cool before serving.
