Salmon and Chanterelles over Green Goddess-tossed Arugula


Dressing Ingredients:

1 cup parsley

1 cup dill

2 green onions

2 cloves garlic

1/3 cup tahini

1/4 cup water

salt to taste


Salmon Ingredients:

1 filet salmon

2 tablespoons olive oil

1/2 teaspoon garlic powder

salt and pepper to taste


Salad Ingredients:

10-20 Chanterelles (or as many as you can find, sautéed in butter and salt to taste)

2 cups arugula

1 cup radishes, thinly sliced

2 Persian cucumber, diced

1/4 cup red onion, thinly sliced


Instructions:

  1. Combine all of the dressing ingredients and blend until smooth.

  2. For the salmon, combine olive oil, garlic powder, salt and pepper in a small bowl. Brush this mixture onto the salmon and air fry at 400 degrees Fahrenheit for 8 minutes or bake at 425 degrees Fahrenheit for 12 minutes.

  3. For the salad, combine the arugula and veggies with the dressing. Toss thoroughly.

  4. Create a bed with the arugula mixture and top with the cooled salmon and chanterelles and enjoy!
